To prepare the zucchini noodles, use a vegetable spiralizer (I really like the one from World Cuisine) or use a hand peeler to turn them into linguini-style ribbons.
Makes 2 servings
Prep time: 15 minutes, 2 zucchini, spiralized or peeled into ribbons
2 Roma tomatoes, diced
½ of a small bell pepper, diced
25g chopped Botija olives
35g raw pine nuts
1 to 2 tablespoons (15 to 28ml) olive oil
1 tablespoon (3g) chopped fresh basil
1 small clove of garlic, crushed
Salt and pepper, to taste
Light squeeze of fresh lemon juice
Toss all the ingredients in a bowl and serve.
