2 tablespoons vegetable oil
3 garlic cloves, finely chopped
1 fresh red chilli, deseeded and finely chopped
2.5cm piece of fresh ginger, grated
20 raw king prawns, peeled and deveined, with tails left on
3 tablespoons yellow bean sauce
1 tablespoon Shaoxing rice wine or dry sherry
1 tablespoon caster sugar
1 fresh red chilli, sliced, to garnish
Heat the oil in a wok or large frying pan over high heat. Add the garlic, chilli and ginger. After 10 seconds, add the prawns and toss to combine.
Then add the yellow bean sauce, Shaoxing wine, 1 tablespoon water and the sugar.
After 4 minutes, check a prawn to see if it is cooked. Scatter with fresh chilli and serve.
